Liquid nitrogen is spread used in aquatic product, fruits and vegetables field as refrigerant.
The temperature of normal freezing tunnel is -35°C, ice cream is high fat content, and expansion rate is reach to 85% or over.
If there is no low temperature to fast freeze the torch ice cream in production, the ice cream will collapse when through the tunnel.
If the client adopts liquid nitrogen to spray, it will make the ice cream rapid prototyping and hard to avoid collapse in long time freezing.
